Mexican Grilled Cheese Sandwich

1 pack CopperLeaf Gourmet Guacamole Mix
8 slices white bread

2-4 Tablespoons soften butter
2 medium tomatoes, thinly sliced
8 slices apple wood smoked bacon, cooked
12 ounces Pepper Jack cheese, sliced

Mix Guacamole Mix with the avocado in a medium bowl.

Spread the avocado mixture over four slices of bread. Top each with tomato slices, bacon and cheese. Finish with another slice of bread. Butter each outer side of bread.

Sauté or grill sandwiches over medium heat until golden brown on both sides or until cheese are melted. Cut sandwiches in half and serve.
