7-ounces rice noodles
2 tablespoons olive oil
3 carrots, thinly sliced
1/2 celery, thinly sliced
1 ½ cup sugar snap peas
1 yellow or red bell pepper, cut into ½ inch cubes
1 teaspoon fresh grated ginger
1 pound pork loin or boneless chicken breast, or thinly sliced
1 ¼ cup CopperLeaf Gourmet Pineapple Orange Serrano Sauce
- Cook rice noodle follow the direction on package.
- In a large skillet, heat oil over medium heat. Add carrots; stir fry for 3 minutes. Add celery, snap peas and peppers, stir-fry for 3 minutes more. Remove vegetable from skillet.
- Add Pork and ginger to skillet, cook until chicken is done. Add vegetable and Pineapple Orange Serrano Sauce, heat for 2 to 3 minutes. Serve over rice noodles.
